Is there no end to the exciting changes at the Distillery?!  Not yet.  For one, we are delighted to announce that Victoria Spirits will be renamed Victoria Distillers effective immediately.  The change brings a new focus on our company as makers and collaborators, as well as highlighting the distillery as a destination.

The launch of this website signals the shift to approaching our work with a more open and collaborative spirit.  We want to include you – the home bartender and consumer – in the journey, helping make your great drinks even better.  Join us!

As the holidays approach, we’re celebrating with new bitters!
These concentrated tinctures of herbs and spices bring a kick to cocktails and cooking.  Bitters are indispensable at Christmas.  Why?  Sure they are great stocking stuffers, but more importantly, we can’t let those cocktails or holiday events get too saccharine… complex times demand complex solutions.  Our bitters bring a perfect balance to the holidays, and Ginger has arrived just in time to brighten holiday drinks and enliven holiday baking.

BOLD MOVE!

Great plans are afoot – no more exciting than the opening of our new waterfront distillery!  We’ll be cutting the proverbial red ribbon and welcoming all for tours and tastings in May 2016.

We loved our little cabin the woods on Old West Saanich Road in Saanich, but this unique location on the Seaport Place waterfront of Sidney will be a breath of fresh air.  We hope the new distillery will create a regional focal point that is unmatched anywhere in the province, in terms of both its natural setting and environmental sustainability.

The new distillery will house two copper pot stills, which will continue to produce our award-winning, small batch, premium spirits.   The site will maximize the opportunity to involve the local community and visitors in the experience of distilling.  As well as a bustling centre for consumer education, the distillery will become a site for collaboration, as long-time Master Distiller Peter Hunt continues to team up with talented bartenders and other local producers to develop innovative spirits.  An on-site lounge is also in the plans.   Details to come!
